What's for dinner~Stir Fried Rice and Tofu

Stir Fried Rice and Tofu
Stir fried rice:
(I usually stir fry with olive oil but not at a high heat)
one medium onion cut into smallish pieces
2 celery stalks cut into small chunks
A couple of sliced green onions
Some red, yellow or orange pepper cut in small pieces
2 or 3 carrots also cut small
When these are almost done add some red chili paste if you have any
Left over rice-a couple of cups Left over rice works the best
2 cloves of garlic cut up small
When everything is warm and cooked through add some frozen peas
2 eggs I let them cook for a min. or so and then stir in before they are completely cooked

You can experiement with different veggies
Add soy sauce to taste (I use wheat free tamari soy sauce)

I cooked my tofu with green onions split down the center and in two in pieces, thinly sliced shallots, soy sauce, a little olive oil, and mushrooms.

What's for dinner~Turkey Rendang

Turkey Rendang (Malaysian)

Fry in a little oil (or if your cutting down on oil just put in a cup of water)
1-3 Shallots depending on size and your desire
A large sliced onion
1 mild green chili pepper (I used the ones in a can)
A bit of red chili pepper flakes (add more if you like it hot)
3t. ginger root or a bit of dried ginger
8 cloves of garlic (yup I said 8)

Add in the pot
1 package of ground lean turkey
Lemon grass (to taste)
1 and 1/2 cup of water
1 can of light coconut milk

Add some frozen peas if you want something green in there and are too lazy to make a separate vegetable (I call this pot o' dinner when it all comes in one pot)

Bring to boil for 10-15 min. then simmer for 40min-1hour until you have just a bit of liquid and mostly meat

Serve with rice

Sliced fresh mango and banana with coconut on top for dessert.

The Garden

Ok I have a garden edit..."We" are growing: 3 kinds of carrots, chives, storage onions, walla wallas, leeks, scallions, 3 kinds of beets, broccoli and brocolini, cauliflower, cabbage, various and sundry lettuce or is that letti..., zucchini, hubbard squash, 3 kinds of spinach, chard, kale, marjoram, basil, oregano, and thyme.

Life at the cabin

Life at the cabin...I am going to call my house the cabin. It is very rustic for a house...but if I call it a cabin it seems much more plush. So-cabin it is.

We have a new friend. He/she is a one legged blue jay. We have aptly named it "one leg." One leg has a couple other blue jay friends and daily they stop by for peanuts in the shell.

N got some free huge crate like things that we (and when I say we-I don't mean me) have turned into very cool raised planting beds. Hopefully we are growing carrots, lettuce, potatoes, onions, tomatoes, squash, peppers, uhm..peas I think and maybe pole beans. I stay in by the fire and draw while this lovely garden proceeds. It is my job to make yummy things from the booty.

Update-42 Hounds Mongoose FOUND!

Update on my 42 Hounds project. My little mongoose (that I have now decided does look way more like a giant anteater) was found by Sarah at the Backyard Bird Shop in Oregon. This is what Sarah has to say:

'Amy-
My name is Sarah, and I found your tiny picture of your cute mongoose painting at the backyard birdshop while shopping there with my sister and my mom. In case your wondering why I'm saying "with my mom and sister", it's because I'm only 12. When I found it, I was really excited and happy!!!! I felt so lucky that I found 1 of 42 of your little paintings! It's so adorable and detailed. I just can't beleive I found it!! Well, I want to thank you for putting these out for people to find, and I LOVE it!!

Hanuman-Hindu Monkey God

This is a little painting of the Hindu Lord Hanuman. A monkey god and devotee of Lord Rama. He symbolises courage, devotion, strength, humility, and above all selfless service. When he yawns he exhales suns, moons and stars.

Ginseng Spirit

I get headaches. Terrible ones...from Fibromyalgia. They suck and western medicine was no help at all for it. So I did some research and tried ginseng. I take it every day and I have NO headaches. If I feel it coming on-I make a quick iced tea out of ginseng extract and wham. Headache gone. Amazing stuff. So this is my little offering to the ginseng spirit.

Thanks!

This is just a quick shout out to everyone who posts comments on my blog here. I just have to thank you all! I love logging on and seeing what y'all have to say about my work. It is so nice of you to take the time out of your busy day. It helps me not feel like one of those narcissistic -freak shows- (I stole Gary and Dave's term there) who go on and on about themselves in their blog while no one is actually reading it. Phew! Someone is out there reading mine. Thanks you guys.

42 Hounds-Polar Bear

My Secret Art Agent in Portland (who rocks-I mean look at all the work she has done for me!!!! WOW) dropped off my polar bear for someone to find at the Oregon Zoo. It was left at the Africa Bird Walk.

Chub Creek

Yay! I heard from Dave over at the Chub Creek podcast. I will be sending him his little painting soon. You should listen to Chub Creek if your the type of person who when you were little got together with your pals and on your cassete recorder taped skits-like shoving a banana up your nose. (What can I say? I am a Dink.)

Blue Jay vs. Squirrel

There is this cute little squirrel I have named Indiana. I put whole peanuts in a pot outside my studio door for it every day. So all day it goes from the pot out to it's -area- which is a moss covered log. It has worn a trail through the grass it makes this trip so much. So the latest drama is that a blue jay is trying to nab Indiana's peanuts. So Indiana has to run 180 miles an hour back to the pot to try to scare off the blue jay before it steals a prized legume. And the blue jay dive bombs Indiana on his trip back to the mossy log with the nut. Funny stuff.

Not about you.

This is a little piece that I just did for myself. Not sure yet if I will put it up on ebay or keep it or what. I think it is called It is not about You. It isn't. That peaceful shaman hut? It's mine. Yup. I get to go there whenever I want and meditate. That beautiful little orange tree? Guess what? It isn't yours. Nope and those stars and that moon? Mine too.

We all know one of those people don't we? I don't know if they are narcissistic or controlling or what their deal is, but they think that we are just constellations that revolve around them like some sort of planet or moon and it is all about them. You know someone like that right? We all do. And I bet they think this song er...art...is about them. Don't you?
