What's for dinner~Easy Chicken Casserole

Last night I made a sort of chicken casserole.

I used wheat free noodles (cooked them first)
a leek
2 carrots
2 stalks of celery
a handful of frozen peas
a handful of lima beans
1 white onion sliced
Some sage and thyme
1/2 teaspoon of salt
lots of fresh ground pepper

Mix up 1 cup or so of soy milk
with 1 cupish of water
2 heaping teaspoons of flour (I used soy flour)
1 egg

I made so many veggies that I ended up using one large and one small pyrex-put the pasta in first, then the veggies, then several frozen chicken breasts

I then poured the liquid mixture all over it

And put it in an oven at 400 for 35-50 min. Check frequently.

Easy and Yummy.

What's for dinner~Black Eyed Peas and Stinging Nettles

Black eyed peas and stinging nettles

I made this recipe (which is my own) tonight. It is amazingly good. mmmmm

Yup stinging nettles...like you might have run into when camping. My yard is full of them. They are high in all kinds of viities and minerals...also histamines and seratonin!

Fry up some small chunks of bacon and set aside (you can skip the bacon if your a vegetarian)

I am lazy this week and am using canned black eyed peas but you can use dried just be sure to soak them prior

Fry in a little bit of oil one large onion (sliced), a stalk of celery...when they are translucent add 2 sliced carrots and 6 cloves of garlic cut up. Cook through and add 1 can of black eyed peas and the bacon

When this is warmed through add 1 or 2 cups or so of nettle leaves (be sure to collect them wearing gloves)

Cook for approx 5 min.

Serve over rice

What's for dinner~Stir Fried Rice and Tofu

Stir Fried Rice and Tofu
Stir fried rice:
(I usually stir fry with olive oil but not at a high heat)
one medium onion cut into smallish pieces
2 celery stalks cut into small chunks
A couple of sliced green onions
Some red, yellow or orange pepper cut in small pieces
2 or 3 carrots also cut small
When these are almost done add some red chili paste if you have any
Left over rice-a couple of cups Left over rice works the best
2 cloves of garlic cut up small
When everything is warm and cooked through add some frozen peas
2 eggs I let them cook for a min. or so and then stir in before they are completely cooked

You can experiement with different veggies
Add soy sauce to taste (I use wheat free tamari soy sauce)

I cooked my tofu with green onions split down the center and in two in pieces, thinly sliced shallots, soy sauce, a little olive oil, and mushrooms.

What's for dinner~Turkey Rendang

Turkey Rendang (Malaysian)

Fry in a little oil (or if your cutting down on oil just put in a cup of water)
1-3 Shallots depending on size and your desire
A large sliced onion
1 mild green chili pepper (I used the ones in a can)
A bit of red chili pepper flakes (add more if you like it hot)
3t. ginger root or a bit of dried ginger
8 cloves of garlic (yup I said 8)

Add in the pot
1 package of ground lean turkey
Lemon grass (to taste)
1 and 1/2 cup of water
1 can of light coconut milk

Add some frozen peas if you want something green in there and are too lazy to make a separate vegetable (I call this pot o' dinner when it all comes in one pot)

Bring to boil for 10-15 min. then simmer for 40min-1hour until you have just a bit of liquid and mostly meat

Serve with rice

Sliced fresh mango and banana with coconut on top for dessert.

The Garden

Ok I have a garden edit..."We" are growing: 3 kinds of carrots, chives, storage onions, walla wallas, leeks, scallions, 3 kinds of beets, broccoli and brocolini, cauliflower, cabbage, various and sundry lettuce or is that letti..., zucchini, hubbard squash, 3 kinds of spinach, chard, kale, marjoram, basil, oregano, and thyme.

Life at the cabin

Life at the cabin...I am going to call my house the cabin. It is very rustic for a house...but if I call it a cabin it seems much more plush. So-cabin it is.

We have a new friend. He/she is a one legged blue jay. We have aptly named it "one leg." One leg has a couple other blue jay friends and daily they stop by for peanuts in the shell.

N got some free huge crate like things that we (and when I say we-I don't mean me) have turned into very cool raised planting beds. Hopefully we are growing carrots, lettuce, potatoes, onions, tomatoes, squash, peppers, uhm..peas I think and maybe pole beans. I stay in by the fire and draw while this lovely garden proceeds. It is my job to make yummy things from the booty.

Studio33

I created a new ebay art studio group called Studio33. It is a very small group of artists who are all juried into the group by group members. It functions like an art studio but virtual. Whee! Here is my first listing.
