Fall Garden Veggie Stew

Fall Stew

This recipe is super can add all kinds of things that you have to much left over of in your garden (if you are lucky enough to have fresh veggies)

Saute in a small soup pot 1 medium onion in a little oil
Once it is almost transparent add 2 cups water
1 cup of some sort of wild rice mix
1 small sugar pumpkin peeled and cubed (you can use any variety of fall squash here)
1 (or to taste) teaspoon of chili powder
You can add oregano to taste too if you want
1 can corn or some fresh corn
1 can diced tomato or fresh tomatoes

Cook for about 30 minutes on medium heat (cover if you want the rice to cook faster)

Add 1 or 2 cans of white beans

Cook for about 10 more minutes. When rice and pumpkin are soft-it is done.
