Gluten Free Southwest Lettuce Wraps

Southwest Lettuce wraps

Gluten free! (You can use flour or corn tortillas in place of the lettuce if you want)

Several large lettuce leaves (I like Butter Head) Wash (spin if you have a salad spinner) then set aside

Mix in a large skillet
1 Package ground turkey
1 medium onion diced
I don't use any oil-the meat (and later the lime and salsa) are enough to keep it moist

Saute on medium heat

Add dried ancho chili powder to taste
some salt

When turkey is brown add:
2 ears fresh corn cut from the cob
1/2 red, orange, or yellow pepper diced
1 Bunch of green onions
2 small to medium tomatoes
a couple of tablespoons of the salsa of your choice
a couple of teaspoons of fresh lime juice

Cook for about 5-10 minutes on medium heat

Wrap in Lettuce leaves and enjoy!

(I like to add lots of Cholula hot sauce)
