Trail to the beach
N built the coolest trail down our steep ravine to our beach. This is what it looks like.

"Montague the Meercat Shakes His Spear at Capulet the Aye-Aye."
What's for Dinner?~Veggie Bake
Vegetarian Bake
Start by making Polenta
4 cups water (boil)
1/2 teaspoon of salt
slowly pour 1 cup of corn meal (I like Bob's Red Mill Polenta)
Stir in 4 cloves of cut up fresh garlic
4 or 5 sliced green onions
Cook for approx. 10 min. or until thick
Boil in water for 2-3 min. 2 Cups of fresh Nettles or Spinach
Add to the polenta before your finished cooking it
Oil a 9x13 Pyrex or similar baking dish
pour polenta into dish and spread evenly
thinly slice and layer any of the following veggies: mushrooms, eggplant, tomatoes, yellow squash, zucchini
Salt and pepper the top and add dried oregano and basil
If you want you can grate parmesan or romano on the top
Bake at 400 for 30-50 min. until lightly brown
